butter in heavy large saucepan over medium heat.<\/li><li>Add shallots and garlic.<\/li><li>Saut\u00e9 until shallots and garlic are tender, about 5 minutes.<\/li><li>Season with spices and cayenne.<\/li><li>Add orzo and toss gently to coat with spices and butter.<\/li><li>Saut\u00e9 ~5 minutes to lightly toast the orzo.<\/li><li>Watch carefully to<br \/>ensure orzo does not burn.<\/li><li>Once orzo is toasted, add the Prosecco or wine if using; stir and simmer for ~30 seconds.<\/li><li>Mix in remaining stock\/water (total of 6 cups of liquid).<\/li><li>Simmer uncovered until orzo is tender, liquid is absorbed.<\/li><li>Stir often while the orzo is cooking. This step should take ~15-20 minutes.<\/li><li>Once the orzo appears creamy, turn off the heat.<\/li><li>Add thyme and lemon zest. Stir gently.<\/li><li>Taste and adjust seasoning if needed. Add the peas and stir to warm and complete cooking.<\/li><li>Top orzo with the roasted asparagus and freshly<br \/>shaved parmigiano reggiano.<\/li><li>Serve with fresh lemon<br \/>wedges.<\/li><\/ul><p><em>Serves 4-6 as a vegetarian entree; 6-8 as a side dish.<\/em><\/p><p><strong>Note:<\/strong> Recipes are and remain the property of Comfort N Spice.
