Dice to 1\/4 inch dice and place in a nonreactive bowl.<\/li>\n<li>Dice tomatoes to 1\/4 as well; add to cucumber.<\/li>\n<li>Peel onion and dice to 1\/4 inch; combine with<br \/>cucumber and tomato.<\/li>\n<li>Add chilies, juice of ONE lemon, vegetable oil, 1 TB<br \/>chopped cilantro, salt and pepper to taste. Add a pinch of cumin if desired.<\/li>\n<li>Mix well and refrigerate.<\/li>\n<li>\u00a0<\/li>\n<\/ul>\n<p><strong>Prepare Lemon Cilantro Butter:<\/strong><\/p>\n<ul>\n<li>In a small bowl, mix softened butter, juice of remaining<br \/>lemon, 3 TB chopped cilantro, and salt and pepper to taste.<\/li>\n<li>Mix well and set aside.<\/li>\n<\/ul>\n<p>\u00a0<\/p>\n<p><strong>Prepare the Salmon:<\/strong><\/p>\n<ul>\n<li>Season salmon with salt, pepper, Creole spice (optional).<\/li>\n<li>Mix olive oil and minced garlic together.<\/li>\n<li>Rub on salmon<br \/>filets. Gently massage the flavors in to the salmon Cover and marinate in refrigerator for 2 hours (overnight if time<br \/>allows).<\/li>\n<li>Place salmon on foil or an oiled broiler pan.<br \/>Broil salmon on pan ~2-4 inches from heat source for about 7minutes.<\/li>\n<li>Baste salmon with Lemon Cilantro Butter and cook an additional 2 minutes.<\/li>\n<li>Top each fillet with a dollop of salsa and sprig of fresh cilantro.
